Winemaker Notes

These grapes are from three clones, hand harvested, on loess soil, at four separate times from the 10th of September until the 15th October. 50% fermented in stainless steel and 6 months on lees. 35% in 500L 2 year‐old oak and 6 months on lees without sulphur. 15% fermented on the skins, post‐fermentation was 4 weeks, ageing in stainless steel for 6 months, then blended.

Tasting Notes

Bright and intense lemon yellow color, the nose expresses linden blossom with hints of citrus fruits, herbs and passionfruit. On the palate, there is a depth and weight that is exceptional Sauvignon Blanc. The key has been to balance carefully managed oak influence with the naturally aromatic character of the Sauvignon Blanc variety. This wine has juicy acidity, is medium to full bodied, with seamless harmony between oak and fruit with a powerful and long finish.

Suggested Pairings

This bright, dry wine stands on its own, but can easily be paired with fresh salads, fish, pasta, chicken and turkey with semi‐strong sauces. Should be served between 50‐54 degrees Fahrenheit and can be stored for 3‐5 years.
