Winemaker Notes

Harvested by hand into small boxes and manufactured using the traditional method of bottle fermentation. The wine was aged for 36 months on its own yeast lees, after which the lees are removed by disgorging.

Tasting Notes

Dry, sparkling extra brut wine with pale brilliant yellow color with a persistent mousse and fine bead. The bouquet features an intense citrus aroma with hints of orange and green apple. On the palate, the intense citrus is complemented by a fine acidity and soft texture. The long finish is characterized by crisp, refreshing acidity and pronounced minerality.

Suggested Pairings

This wine is a delightful accompaniment to oysters. It also goes will with stuffed mushrooms, a brie or triple-cream cheese, and of course foie gras. It should be served at 44 and 46 degrees Fahrenheit and can be cellared for 2-6 years.
