Winemaker Notes

Herr Gewürtz is made from three types of clones harvested at different times of ripeness and harvest. The first part was fermented for one week on the skins in open plastic casks. The second part was fermented for two weeks on the skins in open plastic casks. And the third part was fermented for three weeks on the skins in open plastic casks.

Biodynamically Farmed. Wild yeast fermented. No fining and filtration. Low Sulfites. Vegan.

Tasting Notes

A saturated yellow with a hint of orange, and a slight cloudiness that announces the unfiltered nature of this wine. Bread, yeast, lychee and rose petal. The perfect pairs of secondary and varietal characters that prove seamless in their harmony. Rich, doughy and flavorful, with delicious mouth-watering acidity and strong yeasty and tropical fruit characters, with just a hint of the finest tannins, from extended skin contact. An intriguing wine not for the faint-at-heart. Progressive and complex, this wine marks a new wave in stylish wines with minimal intervention and with a strong emphasis on maceration on skins and ageing on natural sediment, with its racy rash of savoriness alongside muted tones of the normally dominant variety from which it’s made.

Suggested Pairings

Pairs beautifully with seafood and salads. Serve between 50-54 degrees Fahrenheit. This wine can be kept for 3-5 years.
