Winemaker Notes

The 2017 cuvée was biodynamically farmed from 7-10-year-old vineyards.  Hand harvested at 22-23 points of sugar in the end of October.  Fermentation with hand pigeage in 1000L open casks for one month with skin contact. Following pressing was malolactic fermentation and pumping to barrels. Blended after 12 months. Aged for 12 months in 1-3-year-old 228-500L oak barrels.

No fining or filtration. Age for 2-5 years.s bottled without filtration or fining.

Tasting Notes

Bright, mid-ruby red, the nose shows the plum and spice of Merlot along with the black currant, mint and cedar of Cabernet Sauvignon. This very elegant Bordeaux blend manages to balance the fresh, juicy fruits and firm, mouth-watering tannins that you would expect to see in this style. The velvety tannins and crisp acidity gives this wine a long, clean refreshing finish.

Suggested Pairings

This claret-style wine would pair well with charcuterie, especially pate. Grilled or seared red meats like steak frites with haricot verts would complement well, or just drink it with simple goat cheese or brie.
