Winemaker Notes

Hand harvested at 19-20 points of sugar. 25% fermented on skins with wild yeasts for 3 weeks, the remainder in stainless steel tanks. After bottling, secondary fermentation for low pressure.

Biodynamically Farmed. Natural Wine.
Low Sulfites.

Tasting Notes

Exotic nose with a herbal character. A bright, fresh and slightly hazy sparkler, showing that two or more aromatic grapes and skin contact can work together wonderfully. Bone dry and lip smacking delicious.
